The cable transforms the 3.5mm TRRS jack connection to a 3.5mm Mic jack and a 3.5mm Monitor jack connection. You can connect a microphone to the 3.5mm Mic jack and headphones to the 3.5mm Monitor jack. This way, you can record higher and better quality audio.
